Equipment

  • Deep frying pan

Ingredients
  

  • 2 Nos Bitter gourds (Karawila)
  • 1 no tomato
  • 1 no medium size onion
  • 2 nos green chili
  • Salt As per taste
  • 1 tsp lime juice
  • Cooking oil as necessary

Instructions
 

Step 1 – Deep frying bitter gourd

  • Wash bitter gourd. Cut in to halves and remove the seeds.
    Slice bitter gourd thinly.
    Add the bitter gourd slices in to salt water. This step is to remove some bitter taste.
    Once all bitter gourd are sliced allow to soak in saltish water for about 5 minutes.
    Then wash & squeeze in salt water.
    Do another 1-2 washes and squeeze the water.
     
    Heat oil for deep frying.
    Deep fry the bitter gourd until golden colour.

Step2: Preparation of the Karawila salad

  • Slice onion & green chili.
    Slice the tomato.
    Add salt taste. Mix well with lime juice.
    Then add deep fried bitter gourd to this mix.
    Mix well again to absorb the flavours to bitter gourd.

Notes

  • It is more flavourful when you mix the salad just before the meal .
  • You can keep deep fried bitter gourd in an air tight container for few weeks. Keep the air tight container in the fridge. When you want to prepare a bitter gourd salad, it is quick and easy as you already have deep fried karawila.
