Make the dressing
- In a small bowl,put lemon juice and olive oil.Whisk until combined.Add sugar and mayonnaise to the mix and whisk well.Season with salt and pepper as per taste.
Prepare Asparagus
- Trim the Asparagus spears.Cook in salted water for 3-4 minutes until Asparagus spears are soft.
Final preparation/ Serving
- Prepare a serving dish with arugula leaves.Arrange the cooked Asparagus spears on arugula leaves.Pour the dressing over the Asparagus spears.It is ready to serve.Enjoy!
Notes
Use extra virgin olive oil for the dressing.
You can substitute arugula leaves with another healthy green.
