Chettinad Pepper Chicken from Chef Sanjay Thumma

This Chettinad Pepper Chicken Recipe is adapted from Chef Sanjay Thumma of Vahrehvah.com. I found this as another delicious Chicken recipe. This Pepper Chicken is a good change for everyday Chicken curry.

Ingredients (2-3 servings)

250g Chicken, cleaned & cut into pieces
1 tspn Ginger garlic paste
1 medium sized onions (sliced)
1 tomato-sliced

2-3  Green Chili (sliced)
1 sprig Curry Leaves
3-4 tbsp oil
1 tspn mustard seeds
1tsp Coriander powder
¼ tsp Turmeric powder
1 tsp cumin seeds
1 tspn chili powder
1 tsp Garam Masala (clove, cardamom, bay leaf, cinnamon)
1 tspn Whole black pepper
Salt to taste
Coriander leaves for garnish
Method

Heat oil in a large pan. Once oil is hot, add mustard seeds. When mustard seeds are popping up, add the onions, curry leaves, and ginger garlic paste. Sauté for a while.
Then, add all spices other than pepper. Add coriander, turmeric powders, garam masala, chili powder and salt. Mix well. Then add tomatoes & Green chili. Cook in a low flame & allow it to become like a sauce. Then add the chicken to the frying pan and mix well. Cover and cook over a low-medium heat for 20-30 minutes or until the chicken is cooked well. No need to add water. The liquid from chicken itself is enough to cook this dish.
Meantime, grind/crush pepper. When the chicken is almost done, add the ground pepper into it and mix well. Check salt. Simmer for few seconds. Garnish with Coriander leaves.
This goes well with rice or roti.

Tips to get the flavor 
-allow mustard seeds to splutter well.
-add turmeric powder to the oil.
-Cook this dish in a large pan. So the flavor will distribute evenly.
