Pomegranate & Pear Salad with Yogurt Dressing (A Christmas Salad)

written by Amila Gamage Wickramarachchi November 29, 2012

Pomegranate & Pear Salad with Yogurt Dressing (A Christmas Salad)

Christmas is always themed with Red & Green. I can see lot of festive dishes are posted by fellow bloggers & all these posts make me exciting! So I thought of preparing a salad matching with the festive season.

Pomegranate seeds gave a bright appearance for this Christmas salad while Pear added a bit sweet taste. Hope you like this Christmas  Salad same as me.
Ingredients (for the salad) (for 2 servings)
1-2 cups roughly cut lettuce & salad greens
1 cup pomegranate seeds
1 ripe medium sized pear, thinly sliced
½ of a cucumber cut into small cubes
Ingredients (For yougurt dressing)
1/2 cup of plain yogurt
2-3 spoon of grated carrot
1 tspn mustard cream
Salt & pepper as required
Method

First prepare the dressing.
Place all ingredients for the dressing except the yogurt in a bowl. Mix them well to combine.
Then add yogurt & mix well until combined. Place in a refrigerator until use.(for few hours)
Just before serving,
Add the salad greens in to a bowl with the dressing. Toss to coat. Mix well to combine.
Divide the greens among few salad plates. Garnish each salad with the pear slices, pomegranate seeds and cucumber cubes. Serve immediately. If need, serve remaining dressing in a separate bowl.
What do you think? Is this colourful & suitable as a Christmas Salad? Would love to hear from you…..
