I usually add salads to our meal simply because; it is fresh, easy and healthy. Sometimes I add hard boiled eggs too. In this egg salad, I added hard boiled eggs to a tomato, onion and green chili mix.It was fine.Just keep in mind to not to overcook the eggs. Once overcooked, the yolk looks darker and tastes different. It is not appealing too.
When I want to hard boil eggs, I simply use the steamer part of the Rice Cooker and steam it when I cook rice. Once rice is cooked, I remove the steamer from the rice cooker and rinse the eggs under cool water. In this way I prevent eggs from overcooking.Â
Easy Egg Salad
However, if you cook eggs in boiling water in a separate pan, here is how to boil the eggs.
Place eggs in a saucepan. Fill with water until eggs are covered by 2 inches of water.
Then remove eggs from pan, keep aside. Place the pan over medium heat and allow water to boil.
When water is boiling, add eggs to the pan carefully. Reduce the heat to low and continue cooking eggs for 9-10 minutes. Then remove the eggs and rinse under cool water.

Oh yes, I do boil eggs in rice cooker and over the steamer with rice at the bottom. Nice platter and all came together for an inviting taste.
