Creamy Spring Onion Soup

Basically I am a soup lover, my husband too. So I prepare a soup most of the days. This spring onion soup recipe was found when I was browsing for recipes & that was in my mind.
Last week I could try it. The taste was so good & we loved it.

Here is the recipe

Ingredients (2 servings)

1 bunch of spring onion (about one cup when cut & sliced)
1 cup fresh milk
1 cup water
1 tbspn corn flour
1 tbspn butter
½ cube of a vegetable stock dissolved in ½ cup of water
Salt & pepper to taste

Method:

Heat butter in a pan, when it is melted, add sliced spring onion.
Sauté for about 5-10 minutes in low flame.
Then slowly add & mix corn flour.
Then add vegetable stock
Mix well. Simmer for about 5 minutes.
Switch off the flame.
Allow to cool down. Then blend the mixture.
After that re-heat the mix adding 1 cup water.
When water starts boiling, add fresh milk.
Stir well & adjust salt & pepper.
Remove from flame & serve hot.
