The global food market is booming. By the end of 2028, global revenue for the food market is expected to hit a new peak of 12.96 trillion – yep, trillion – US dollars (Statista). Simply put, there’s never been a better time to be in the industry, especially when it comes to novel foods.

Whether you’re a food manufacturer or someone with a passion for the industry, it’s always a good idea to stay on top of the latest novel food trends. After all, there’s always a demand for new sensations. That’s why this guide has put together a list of the biggest trends at the moment for you to explore.

Increased Food Safety for Novel Food

These days, food safety is more important than ever. It’s something that consumers care about a lot, with their purchasing decisions often influenced by the safety and quality of the food in front of them. This is particularly true when it comes to novel food since customers are specifically seeking it out and, therefore, have a higher investment in its safety and quality. Plus, as it is new, there may be more frequent regulation changes or disruptions to the supply chain. The Rise of Cultured Meat

Cultured meat, also known as “lab-grown” meat, is a type of meat that’s grown from animal cells. It’s still real meat, but it doesn’t require the slaughtering of animals, which ultimately makes it better for the environment.

Currently, this is still a novel food technology and is yet to reach supermarket shelves. However, just recently, the US Department of Agriculture approved lab-grown meat produced by GOOD Meat and UPSIDE Foods, which is a sign of what the future holds for the novel food industry.
