Onion & Parsley Soup

From few days I am down with flu. Even I couldn’t go to office on Friday. Luckily we have a long weekend, so I hope I will be able to recover completely by Tuesday (Hopefully). 🙂
I can say I didn’t cook during past days, but I tried to prepare some soups as me & hubby both are soup lovers.
I had half bunch of parsley in the freezer & now it is time to use it & buy fresh parsley for the next month. This soup is a result of it.
I experimented with parsley & onion. Anyway the taste was so good & I loved it even I didn’t have appetite.
Here is the recipe
Ingredients (2 servings)

1 large onion sliced
1 cup of parsley- chopped
1 cup fresh milk
1 cup water
1 tbspn corn flour
1 tbspn butter
½ cube of a vegetable stock dissolved in ½ cup of water
Salt & pepper to taste
Method:
Heat butter in a pan, when it is melted, add sliced onion.
Sauté for about 5-10 minutes in low flame.
Then add chopped parsley & sauté for another 5 minutes.
Slowly add & mix corn flour.
Then add vegetable stock
Mix well.Simmer for about 5 minutes.
Allow to cool down & blend the mixture.
Re-heat the mix adding 1 cup water.
When water starts boiling, add fresh milk.
Stir well & adjust salt & pepper.
Remove from flame & serve hot.

I hope you feel better soon Amy!! I was very sorry to hear that you were feeling so bad. 🙁 It’s not fun to be sick, but to have to cook and post is also a lot of work. This soup looks very tasty and comforting. I have never thought to make a soup with parsley as a main ingredient… I must try it! Hope you’re up and around very soon!! Take care! 🙂
