But after I prepared this green peppercorn pickle now I know it is one of the best pickles that I have tasted so far!

Sri Lankans love to eat pickles. These popular Sri Lankan pickles include Achcharu, polos achcharu and Lunu dehi (lime pickle). When we talk about Sri Lankan pickles we cannot forget Malay Achcharu and Wambatu moju. All these dishes show how our cuisine is well equipped with preserved food. And today’s recipe is a bit new for me. I found this idea in Indian cuisine as pickled green peppercorns are much popular as a condiment among them.
Why Green Peppercorn Pickle?
During my recent Sri Lanka holiday I was lucky enough to pick some green peppercorns from my parents’ home garden. As always I enjoy spending time outdoors. Plucking fresh vegetables and ingredients from the garden before cooking is something I always enjoy. Finally, there is a new recipe for Food Corner!
Although I mostly share Sri Lankan recipes through this blog, from time to time I introduce recipes from another cuisine. If I see any recipe delicious or suit for Sri Lankan taste buds then I cook it again and share it here. The same happened with this peppercorn recipe. I know in Sri Lanka, green peppercorns are easily available. If you do not preserve it as black pepper then most of the harvest will be ignored under the trees.
If you can use Green peppercorns in other recipes such as this pickle then it is a good way to preserve the harvest and also add spiciness to your meal.
I am sure now you have doubts about green peppercorn as we commonly use it as black pepper. Therefore below are some of the things that you may have in mind.
What are green peppercorns?
Do you know what green peppercorns are? I am sure you already know what black pepper is as we use it in most of the cooking. Green peppercorns are the under-ripe fruit of pepper that can be used in some recipes. These under-ripened green peppercorns are good for preserving by making a pickle or by drying.
Can you eat green peppercorns?
Green peppercorns are the unripe berries of black pepper. These are less spicy compared to black pepper. Therefore you can eat green peppercorn as it is if you like spicy food. However, there are many different recipes that you can use green peppercorns. While this green peppercorn pickle is one of the ways you can eat peppercorns you can add it to your curries and salads to add mild spiciness and flavor.
You can also preserve green peppercorns in vinegar or in brine.
Are green peppercorns spicy?
Well, I should say that green peppercorns are spicy. However, these are not spicy same like black pepper. Green peppercorns are mildly spicy and full of flavor.
Now coming back to the recipe, I want to say that I really like the peppery flavor of this pickle. These pickled green peppercorns are delicious as a condiment for any rice and curry meal.

Recipe: Green Peppercorn Pickle
Ingredients
100 g green peppercorn with stem
7-8 Lemons
¼ cup Salt or as per taste
Method
Step 1
Wash green peppercorns and drain water.
Place the peppercorn strips on a kitchen towel and allow drying in the air.
Cut the peppercorns in the stem into 1-1.5 inch pieces.
Step 2
Squeeze the lemon juice into a dry clean glass bottle.
Add salt to this juice and mix well.
Once the peppercorns are air dried, add these green peppercorn stems into the bottle.
You have to use lemon juice to fully cover the peppercorns. Adjust the juice quantity as necessary.
Step 3
Cover the bottle. Mix well and keep in a cool place for around 10 days.
Till the green peppercorn pickle is ready, you need to shake the bottle every day to mix the lemon juice with peppercorns.
After a few days, you will see the colour change of green peppercorns.
It is ready to serve.
Enjoy as a condiment or use in salad recipes to add spiciness.
