Fried Rice with mixed vegetables

Fried rice is one of our favorite dishes. It is tasty & easy to prepare. On the other way it is a good way of using left over rice. Fried rice comes well when we cook using left over rice. If the rice is sticky, we cannot get the correct taste. Also we can convert it to a balanced meal by adding some meat, seafood & vegetables.
Here is my recipe of making fried rice. But here I used vegetables only.

 

Ingredients (For 2 portions)
2 cups of cooked rice
1 cup of mixed vegetables chopped (carrot, beans, green peas, spring onion etc)
1 onion sliced
Butter or vegetable oil
Soy sauce
Method
Heat 2 tbspn butter/oil in a pan, once it starts smoking; Add onion & sauté.
When the onions are tender, add the mixed vegetable and mix well.
Now add rice. Mix well
Allow to fry for about 5 minutes, but keep stirring.
Add about 1 tbspn soy sauce at this stage & mix well.
Fried rice is ready to serve.
Now I am sharing this with the event ‘Fast Food but not Fat food‘ started by Priya & Guest hosting by Archana.Ok why I share this for the event? for me this is a fast dish with all nutrients in.I use as many as vegetables & my meal is ready in half an hour.As a full time working professional,this is my option for those days I come home late.I think this is better than buying food outside.
