Steamed Carrot Salad

Easy Carrot Recipes
This is a very simple and easy Carrot Salad from Sri Lanka. It takes few minutes to prepare. I usually add this carrot salad to our meal due to its easiness & health factors. To steam carrot, I use the steam tray of the rice cooker, so once the rice is cooked, carrot is ready to go to the salad. Boiled carrot can be used instead of steamed carrot. But steaming saves its nutrients.
Here is the recipe for simple carrot salad.(Steamed Carrot Salad). Hope you would love it!

Sri Lankan Salad Recipes
Ingredients:
1carrot, steamed/boiled
1 medium sized red onion, sliced
1-2 green chillies, sliced thinly
½ of a small tomato diced
1/4tsp black peppers crushed (or as per taste)
salt to taste
1 tbspn lime juice
Method:
Peel & Cut boiled or steamed carrot into small cubes or lengthwise.
In a bowl combine carrot, onion, tomato  and green chili.
How to make Carrot Salad with Steamed Carrot
Add lime juice. Season with salt and pepper.
Mix well.
Serve.

Here is another way of preparing carrot salad with grated coconut.

I prepare something similar. Some garnish that I try are fried and crushed groundnut. It give a good crunchy feel to otherwise soft carrots. Coconut and carrots together make it more sweet and I prefer that with our flat breads. Good presentation.
