Cream of Mushroom soup is my favourite soup.When I go out for dining,this is the soup I love to try.Anyway I found the recipe in this youtube video & tried it for the first time few months ago.Please follow the below link from Food &Drink for video of this recipe.
Please check my first post about this soup.That time I was lazy to write the recipe,so I just shared the link of video in my post. 🙂 But I don’t like to repost it as it shows my beginning.
After that,I tried this soup at home many times.But I couldn’t post the recipe.
Finally I am posting it.
Now I cook without checking the recipe,so my recipe is slightly changed from the original.Also check this herbal soup from Sri Lanka.

Cream of Mushroom Soup

Here is my recipe,

Ingredients (2 servings)

1 large onion sliced
2  cups of sliced mushroom
1 cup fresh milk
1 cup water
1 tbspn corn flour
1 tbspn butter
½ cube of a vegetable stock dissolved in ½ cup of water
Salt & pepper to taste
Method:
Heat butter in a pan, when it is melted, add sliced onion.
Sauté for about 5-10 minutes in low flame.
Then add chopped mushroom & sauté for another 5-10 minutes.
Slowly add & mix corn flour.
Then add vegetable stock
Mix well.
Then add 1 cup of water.
When water starts boiling, add fresh milk.
Stir well & adjust salt & pepper. If the soup is too thick, add some water.
Allow to simmer in low flame about 10 minutes.
Remove from flame & blend it.
Check for salt & pepper.Adjust if need.
Serve hot.
