Chicken Liver Rice Soup

I recently cooked this chicken liver rice soup and it came out delicious. Specially, I could hide the strong taste of chicken liver combining it with brown rice. Finally not only me, my kid too loved the warm chicken liver rice soup! If you look for a recipe that suits Sri Lankan taste buds,then try this soup.

Chicken liver is considered as a rich iron source. Therefore chicken liver recipes are popular as kids’ food   and even for breastfeeding moms. For anyone who is sick and recovering, chicken liver has a place in their diet. But, I know it is not a delicious food for many others including myself.

Chicken liver health benefits

As per health professionals, chicken liver is high in protein. It is also a rich source of iron. Vitamin B and folate are other nutrients that you can get from chicken livers. Because of all these nutrients it is a good food choice for anyone with anemia or anyone recovering from a sickness.

For this soup, while chicken liver is the main ingredient I added other ingredients such as brown rice, mushroom and tomatoes. So, the flavor was well balanced.Also check this Thai spiced pumpkin soup recipe.

Chicken Liver and Brown Rice Soup Recipe

Chicken Liver Rice Soup

Ingredients (2 servings)

50 g chicken livers

5 tbsp. brown rice

½ tomato sliced

Mushroom as necessary

1-2 red onions sliced

2 cloves of garlic, sliced

2 tbsps. vegetable oil

3 cups water

Salt & pepper to taste

Herbs to garnish.

Method

Step 1

Wash and clean chicken liver. Keep aside.

Wash and clean brown rice, mushroom, garlic and onion and keep aside.

In a pan, heat vegetable oil.

When it is hot, add onion and garlic. Stir fry until aroma emits.

Then add mushroom and fry few seconds.

Add chicken liver and fry for 1-2 minutes until the chicken liver colour turns brown.

Finally add brown rice and tomato.

Stir fry for 1-2 minutes until all ingredients are well combined.

Step 2

Add water and cook in low heat for about 15 minutes until all ingredients are well cooked.

Blend the soup   until smooth.

If necessary add a little water (if the soup is too thick) and simmer for another few minutes.

Add salt and pepper as per taste.

Garnish with herbs and serve warm chicken liver and brown rice soup.

Notes

You can adjust the quantities depending on the taste.
Instead of brown rice,you can even substitute white rice.
Add more mushrooms for different taste.

I sprinkled pinch Italian herb mix as garnishing.(Blend of dried herbs)
