Both Broccoli & Cauliflower are our favorite vegetables. So most of the week I buy them. Today it is almost Thursday, and I wanted to finish all the vegetables in my fridge as I will not be able to cook tomorrow. This is my planning of not to waste food. Saturday is the day for us for marketing & with the new vegetables, I know some of left overs will be wasted.
I found that I have some broccoli & cauliflower left in the fridge. How to use it? Stir-fry, Stew or soup? Yes, a soup. Because me & my husband both are soup lovers!!!
While browsing for a soup recipe, I found few recipes for ‘Cream of Broccoli & Cauliflower Soup’. I adapted it according to our taste & here is my recipe.
Ingredients (for 2 servings)
Handful of Cauliflower
Handful of Broccoli
1 medium size onion diced
2 cups of water
1 tsp corn flour
1 cup fresh milk
1 cup Vegetable stock (optional)
Method
Wash & cut broccoli & cauliflower into florists.
Heat oil in a pan & when it is hot, add onion. Sauté it.
Once the onion looks tender, add cauliflower & broccoli & mix well.
Now add 2 cups of water together with the stock, mix well.
Simmer for about 10 minutes or until the vegetables become soft. But do not overcook.
Once it is tender, take out the vegetables & blend it with fresh milk. Also add corn flour to the mix ,stir well & blend.
Now mix well this with the remaining water in the pan. Simmer until the soup is thick. Stir while simmering.
Adjust salt & pepper.

Yum! I love cauliflower. My partner, on the other hand, loves broccoli but won’t touch cauliflower. I might be able to hide some in a “broccoli soup” though – must try 🙂
