Chicken Stir Fry with Vegetables

I cooked this Chicken Stir Fry with Vegetables to give it a different taste by adding flavors and colors of different vegetables. This is bit spicy and it has lot of black pepper flavor. If you don’t like to eat much chicken, then this is an ideal recipe for you as there are lots of vegetables in it.

I used colorful vegetables such as carrot, cauliflower and beans and red bell pepper is perfect to add colors and flavors for the dish. Before preparing the final dish, I mixed the sauce, so that it is easier to adjust the taste as per personal taste. You can adjust quantities of sauces and other ingredients as per your taste.

We like this Chicken Stir Fry with Vegetables same as the popular Sri Lankan Chinese dish, Chicken devilled. If you noticed, I use the basic recipe for devilled chicken to create its variations including this cashew chicken stir fry. All these dishes are great to match with any fried rice recipe when you want a special meal or when you want to try chicken recipes other than a Sri Lankan Chicken curry.

Chicken Stir Fry with Vegetables

Recipe : Devilled Chicken Stir Fry with Vegetables 

Ingredients

Boneless Chicken cut into 1 inch cubes
Vegetables like broccoli,carrot,green pepper,cauliflower,French beans cut into bite size pieces
1 medium size onion
2 tspn ginger garlic paste
1-2 green chilies
1/2 tbspn red chili flakes

For the sauce

3 tbspn tomato sauce
1 tbspn soy sauce
1/2 tbspn red chili flakes
½ tbspn red chili powder
1 tspn black pepper
½ tspn sugar

2-3 tbspn warm water

1 tspn corn flour
½ cup of hot water

Cooking Oil
Salt, as required.

Method

First deep fry chicken and keep aside.
Clean vegetables and cut into bite size pieces including onions, bell pepper and Green chili.

Meantime, prepare the sauce.

To prepare the sauce, Whisk together the ingredients mentioned under ‘sauce’. Use freshly coarse black pepper for more taste. Check the taste and adjust salt if required.

In another bowl, whisk corn flour with hot water and keep aside.

Prepare the stir fry

In a large frying pan, add oil and heat.
When oil is hot, add ginger garlic paste and fry for 30 seconds.
Now add vegetables and fry 2-3 minutes until the vegetables are half cooked.
Then add onion and green chili together with fried chicken.
Mix well.

Then pour the prepared sauce mixture and mix well till combine well.
Finally add prepared corn flour mix and simmer for 30 seconds.
Remove the stir fry from the cooker, it is ready to serve.

Hi Amila! I’m stopping over from Let’s Get Real today. Your recipe looks delicious. My husband loves spicy dishes so I really want to make this for him. Is there a reason that you “deep fry” the chicken? The vegetables make this a beautiful dish.

Actually you can stir fry chicken and then add vegetables to the same pan.I deep fried because my husband likes in that way.Yes,not so healthy too.
