Guava Pudding with Agar Agar for Valentine’s day

written by Amila Gamage Wickramarachchi January 28, 2013

පේර
I am back with a recipe for Valentine’s day. It is too early to post recipes for Valentine’s day, but I feel bit lazy to start work after a holiday in Sri Lanka. This is a simple recipe using Guava and Agar Agar.
Valentine's day recipes
I brought some Guava (Pera)  from Sri Lanka and want to utilize them in different recipes other than eating them raw. These small guavas taste much than the bigger sized one.

Also, please check and join with Agar Agar recipe contest. The closing date for entries is 31st January. There are 5 exciting gifts for the winners.
Here is my recipe for Guava Pudding with Agar Agar (A pudding with Sri Lankan Pera Fruit)
Ingredients ( 2-3 servings)

Ingredients A
1 ½ cups water
1 tspn Agar Agar (I used Meron Agar Agar)
3 tspn sugar or as per taste
Few drops red colouring
¼ tspn Vanila flavor
Ingredients B
2 small sized ripen Guava
½ cup fresh milk
1 cup water.
1 tspn Agar Agar
Sugar as per taste (optional)
Drop of yellow colouring (optional)
Utensils
Heart shaped cookie cutter
A pudding mould or some silicone cupcake liners
Square shaped dish or mould.(or any flat dish)
Method
First we need to use ingredients A.
Heat water in a pan.  Mix Agar Agar and sugar. Continuously stir until water is boiled. Remove the pan from heat. Add vanilla drops and red food colouring. Mix well.
Strain the mix into a square shaped dish or a mould. Allow for cooling and setting. Once cooled, keep in a refrigerator for better setting.
Until the red layer is set, use the ingredients in B.or wait until the red layer is set.(about 15-20 minutes)
Clean and Remove the skin of Guava, slice into very small pieces.
Add milk and blend until smooth.
Heat water in a pan and mix Agar Agar. Stir constantly. Add the blended Guava pulp into the Agar Agar mix and mix well. Add sugar if needed.(optional).Remove from the heat and add a drop of yellow colouring. Mix well. Sieve the mixture into another bowl and remove the seeds.
Now take the red Agar Agar layer out and cut heart shapes using a cookie cutter.
Valentine's day recipes
Keep a Red Hearts in bottom of moulds .I used silicone liners. So I used one heart per liner. If you use a big mould, arrange hearts accordingly as you wish.
Pour the Guava Pudding mixture slowly on top of this hearts.(use a spoon to pour slowly without bleeding)
Allow the pudding to cool and keep in a refrigerator until set well.(about 15 minutes)
Once set, remove from the moulds.
Garnish with other remaining parts of red Agar Agar layer.
Guava Pudding with Agar Agar is ready to serve.

Notes:
You can use any fruit juice instead of Guava. However colour may change as per fruit colour.
Can use unflavoured gelatin instead of Agar Agar
