Ketogenic Recipes for Dinner

If you or someone in your household is eating a keto diet, then you are probably always on the look out for great, easy, tasty and quick new keto diet recipes to make your meals interesting and delicious. Here we share two new exciting recipes with you. They are keto stuffed meatloaf and keto taco casserole.

Keto stuffed meatloaf

Perhaps you never dreamed of ever creating a stuffed meatloaf of any kind yourself. So now you are up for an exciting challenge that is thrilling and easy to complete. Indeed, you will be pleased at how quick and easy this recipe is when you are leading a really busy lifestyle with work, a spouse, kids and many responsibilities. You and your family are going to love the oozy, gooey cheese when you cut into this divine meatloaf.

One and a half pounds of ground buffalo meat (or ground beef if you prefer)
One and a quarter teaspoon of salt
Two thirds of a teaspoon of white pepper
One teaspoon of minced garlic
Half a teaspoon of curry powder
Eight slices of Monterrey Jack cheese
Half a cup of finely chopped chives
Quarter cup of grated leek
Two thirds of a cup of Swiss chard or spinach
Half a cup of roasted cashews

Combine the ground buffalo meat or ground beef with the salt, white pepper, minced garlic and curry powder in a bowl. In a greased meatloaf pan, place the meat mixture along the bottom and sides. Some meat will be left over to cover the top of the other ingredients later. Set aside the excess meat mixture. Place the cheese on the meat mixture in the meatloaf pan. Next, layer the chives, leek, Swiss chard or spinach and roasted cashews. Top the meatloaf with the remaining meat mixture. Bake the meatloaf at 350 degrees Fahrenheit for an hour. Serve and enjoy.

Keto Taco Casserole

Taco Casserole

When you are craving the flavor of tacos, but do not want the carbs from the flour in the tacos, then taco casserole is the way to go. It is tasty and quick. This makes a nice lunch or supper. This dish is also fantastic to bring to a potluck.

One pound of ground rabbit meat (or ground chicken if you prefer)
Half a pound of ground pork
Half of a small cauliflower chopped
One and half cups of chopped broccoli
One yellow sweet pepper chopped
Half of a chopped jalapeno pepper, more if desired
Half an onion finely chopped
Two large dill pickled chopped
One teaspoon of dried rosemary
One teaspoon of cumin
One teaspoon of dried thyme
Half a teaspoon of chili powder
One teaspoon of minced garlic (or more if desired)
Three quarters of a cup of chopped cilantro (reduce amount if desired)
One and three quarters of a cup of shredded mozzarella cheese
One and a half cups of sour cream
One cup of cottage cheese

Place the meat, cauliflower and broccoli into a bowl. Mix well until combined. Next add in the herbs and spices. Stir in the yellow pepper, the jalapeno pepper, dill pickles and onion. Mix in one and a quarter cups of cheese. Reserve half a cup of cheese for the top. Pour the mixture into a casserole dish. Place the remaining cheese on top. Bake at 350 degrees Fahrenheit for one hour. Mix the sour cream and cottage cheese together. Serve and enjoy with a dollop of the sour cream mixture on top.
