Sambal prawns is a delicious & popular Malay recipe .here I gave a try to cook it at home. The taste was so good. I can’t resist it with some plain rice. Here is the recipe for sambal prawns.
Ingredients:
500g prawn/shrimp, cleaned, shelled and deveined
3-4 tablespoons oil
2 cups of water
2 tablespoons tamarind pulp, mixed with 1/2 cup water and strained
3 kaffir lime leaves, sliced thinly
10 dry red chillies, remove the seeds if don’t want to be spicy
8-10 shallots, peeled
5 tbspn belacan
Sugar 1 tsp or to taste
Salt to taste
Method
Grind red chilly & shallots together with belacan.
Grind them until become a fine paste & Set aside.
Heat cooking oil in a pan.
Once oil is hot, add the spice paste and stir-fry until aromatic.
Then add the prawns. Continue to stir-fry for about 2-3 minutes.
Then add water, tamarind juice and bring it to boil.
Finally add kaffir lime leaves, salt, and sugar. Check sugar & salt as per taste.
The final taste should be a mix of sweet & spicy.
Serve hot with rice.
