I recently cooked this chicken liver rice soup and it came out delicious. Specially, I could hide the strong taste of chicken liver combining it with brown rice. As per health professionals, chicken liver is high in protein. It is also a rich source of iron. Vitamin B and folate are other nutrients that you can get from chicken livers. Because of all these nutrients it is a good food choice for anyone with anemia or anyone recovering from a sickness.

Chicken Liver and Brown Rice Soup Recipe
Ingredients (2 servings)
50 g chicken livers
5 tbsp. brown rice
½ tomato sliced
Mushroom as necessary
1-2 red onions sliced
2 cloves of garlic, sliced
2 tbsps. vegetable oil
3 cups water
Salt & pepper to taste
Herbs to garnish.
Method
Step 1
Wash and clean chicken liver. Keep aside.
Wash and clean brown rice, mushroom, garlic and onion and keep aside.
In a pan, heat vegetable oil.
When it is hot, add onion and garlic. Stir fry until aroma emits.
Then add mushroom and fry few seconds.
Add chicken liver and fry for 1-2 minutes until the chicken liver colour turns brown.
Finally add brown rice and tomato.
Stir fry for 1-2 minutes until all ingredients are well combined.
Step 2
Add water and cook in low heat for about 15 minutes until all ingredients are well cooked.
Blend the soup until smooth.
If necessary add a little water (if the soup is too thick) and simmer for another few minutes.
Add salt and pepper as per taste.
Garnish with herbs and serve warm chicken liver and brown rice soup.
