Dhal Curry with Drumstick Leaves


Dhal curry (Parippu curry)is a popular Sri Lankan food and it is delicious with plain rice, roti or bread. The interesting thing is dhal is a good base for many different curries. By adding different ingredients to the same dhal curry, we can get different curries with different tastes.

Dhal Curry with Drumstick Leaves


In this curry, I cooked dhal with drumstick leaves.(murunga kola).What I wanted is a different recipe to cook drumstick leaves. So, here is a Sri Lankan recipe to cook drumstick leaves with dhal. You can also use the same recipe to cook spinach with dhal. Just replace drumstick leaves with spinach and other ingredients and method is the same.

Dhal Curry with Drumstick Leaves


Drumstick leaves are rich of iron and it is a healthy food for pregnant women and breast feeding mothers. Earlier I shared a recipe of drumstick leaves stir fry. Now this is a recipe as a curry.

Dhal Curry with Drumstick Leaves


Drumstick leaves are freely available in many parts of Sri Lanka. So,try & enjoy cooking this curry. 

Here is my Sri Lankan style recipe to cook drumstick leaves with dhal in a curry.

Ingredients: (for 2-3 servings)

Β½ cup red lentils/Dhal (Parippu)
2 cups of Drumstick leaves
Β½ medium sized onion sliced
1-2 tsp chili powder
1 tbs Raw curry powder
ΒΌ tsp turmeric powder
Β½ tsp fenugreek seeds
1 inch Piece of cinnamon stick
Curry leaves
1 inch Piece of a pandan leaf (rampe)/(optional)
Β½ cup thick coconut milk
1 cup thin coconut milk
Salt to taste
Method

Clean and wash drumstick leaves. Keep aside.
Wash lentils/dhal and put into a cooking pot.
Add all spices, onion, pandan leaf and curry leaves together with thin coconut milk.
Cook till dhal is softened.(to the stage of almost cooked)
Then add drumstick leaves and mix well.
When dhal is fully cooked, add thick coconut milk.
Adjust salt.
Remove from the flame when coconut milk starts to boil.
This curry well goes with plain rice.

I have heard of this veg stir fry but hadn’t tried it. People here mostly use the drumstick pods and since we don’t have a drumstick tree, I hadn’t had a chance cooking with the leafs. by the way they call those moringa in the western world and it’s the latest health fad.
