We all know how versatile omelettes can be– they work as both the main course of a relaxing brunch or as something whipped up for a quick and easy dinner. They can be full of warm melted cheese, browned, packed full of delicious vegetables, topped with meat, or served plain. And if there’s a cuisine you really like – such as Sri Lankan – there’s an omelette recipe you can make to satisfy that craving.
Sri Lankan omelettes can come in a few different styles. The easiest is a basic omelette spiced up with fiery hot chilis, onions and tomatoes. This provides the perfect combination of spiciness, fresh vegetables and protein from the egg, and can be paired with traditional rice or roti – which serve as an antidote to the spiciness. An omelette can also make a great pairing for a traditional Sri Lankan curry.
A Sri Lankan-style omelette is an easy way to spice up your breakfast or lunch, or can make a quick and easy dinner for those who don’t like spicy food early in the day. Here’s a couple of recipes to try out for yourself.
Easy Sri Lankan Omelette Recipe
Serves 1
Prep Time: 5 minutes
Cook Time: 10 Minutes
- 3 eggs
- ½ teaspoon salt
- 1/2 teaspoon Pepper
- 1 tbsp. butter
- 1 tbsp. cooking oil
- 1 tomato (chopped)
- ¼ cup mushrooms
- 2 green chilies (chopped)
- ½ onion (chopped)
Steps:
- Beat eggs in a small bowl, adding salt and pepper to taste.
- Heat the oil in a small, omelette-friendly pan on medium heat.
- Add red onions, mushrooms, and chopped chilis. Cook thoroughly, until the onions are tender – 4-5 minutes.
- Add the tomatoes and cook for 30 seconds.
- Add butter and allow to melt.
- Pour in beaten egg; allow to cook for 2-3 minutes or until egg has set.
- Flip omelette and cook for another 2 minutes or until done as desired.
- Serve with rice and enjoy.
Sri Lankan Omelette Curry Recipe
Serves 2
Prep Time: 7-10 minutes
Cook Time: 15 minutes
This delicious recipe takes a spicy omelette like the one above and then combines it with a traditional Sri Lankan curry – which is also super spicy and loaded with flavor. It’s a good way to add some serious flavor to breakfast or to serve with dinner, and pairs very well with rice or bread.
For the Omelette
- 4-6 eggs
- Salt and Black Pepper (to taste)
- 1 medium onion (chopped)
- 2 green chilies (chopped)
- 10 curry leaves (coarsely chopped)
- 3 tbsp. butter
For the Curry:
- Salt (to taste)
- Black Pepper (to taste)
- 1 tbsp. curry powder
- red chili powder (to taste – a dash or two is usually enough)
- 1/2 tsp turmeric powder
- 1/2 cup water
- 1 cup coconut milk
- 1 large onion (chopped)
- 10-12 curry leaves (chopped)
- 2 tsp fennugreek seeds
- 1/2 tablespoon ginger (ginger)
- 1 tbsp. grated fresh garlic
- 2 tomatoes (chopped)
To Make the Omelette
Beat the eggs in a bowl.
Heat up an omelette pan and add butter. Saute onion, chopped chilies, and curry leaves until tender.
Add beaten eggs, allow to cook for 3 minutes or until eggs have set. Flip omelette and continue cooking another 2-3 minutes.
Remove omelette from pan and slice into large chunks.
For the Curry:
- Add some more butter or cooking oil to the pan. Toss in the chopped onion, curry leaves, fenugreek seeds, tomato, ginger, garlic and salt. Cook until soft.
- Add chili powder, turmeric, curry powder and water. Simmer for 4-5 minutes.
- Slowly pour and stir in coconut milk until thickened. Add more seasoning if desired.
- Once curry has thickened, add omelette chunks and simmer for 5-10 minutes, or until liquid is absorbed into the omelette.
- Serve with rice, roti, naan, or as desired.
