Sambal Kangkong (Kankun stir fry)

Sambal  Kangkong  is one of our favourite recipes from Singapore. Even there is a similar dish popular in Sri Lanka as a Chinese dish. When I cook this at home, sometimes I use store bought sambal chili paste. Then preparation of this dish is really easy. Anyway, preparing the spice paste is not much difficult.So I am going to share the recipe with how to prepare the spice paste at home for this Kang kong dish.

 

Ingredients
300g Kang kong (1 bunch of kang kong)
1-2 tbspn oil
Salt to taste
For the spice paste
1 tbspn dried shrimp
3-4 red chilies (Chili Padi)
3-4 red onions
2 garlic cloves
1 tspn belacan
Method
Grind all the ingredients mentioned under spice paste until smooth.
Heat cooking oil in a wok.(over medium heat)
Add spice paste to the oil and cook about 3-4 minutes until fragrant.
Then add Kangkung, and stir-fry at high heat for about 1 minute until well mixed
Add salt to taste.
Serve hot with plain rice or fried rice.   
Vegetable chop suey and a pan fried fish well goes with this Kang kong stir fry. 
 
Note: Do not overcook.
