Bell Pepper Rice

Bell Pepper Rice

I cooked Bell Pepper rice few days ago and really like the taste. Actually, I’ve read about this Bell Pepper rice in different Food blogs time to time, but my thought was this can be another rice dish. I never thought Bell Pepper can add a different flavor to the rice.

As you know, these days my cooking is bit limited. I spend full time to look after my baby son and there are times I am not ready to cook many things. Different rice recipes are always helpful in this type of situation as it well goes with a spicy curry and a fresh salad. I am able to cook our meal just within one hour without much trouble.
Bell Pepper Rice

 

Now, this is another addition for that busy mom’s recipe collection. Flavors of Bell peppers are awesome. When I cook this rice, my home was filled with the aroma of Bell Peppers. Addition of tomato gave a good flavor to the final dish and I am happy with my latest rice recipe.
Try this; you’ll definitely love to eat again.
Here is my recipe for Bell Pepper rice.

Ingredients (For 2 servings)

2 Cups long grained white rice
1 Red Bell Pepper
1 Green Bell Pepper
1 onion sliced
1 medium sized tomato chopped
ΒΌ tspn turmeric powder
1 sprig curry leaves
Butter or ghee for frying
1 tbspn Ginger Garlic paste
1 clove
1 cardamom pod
1 stick cinnamon
Salt as per taste

Method
Wash rice and drain water.
Keep it aside to drain excess water till other ingredients are prepared.
Wash and remove stems of bell peppers.
Roughly cut them into small pieces.
Slice onion and chop tomato.
Heat butter or ghee in a pan, when it is hot, add ginger garlic paste. Then add curry leaves & sliced onion.
When onions are tender, add bell peppers and mix well.
Fry for few minutes.
Add tomato and mix until tomato is well coated with bell pepper and other ingredients.
At this stage, add rice and fry till rice grains start to pop out.
Add the rice mix into a rice cooker and add correct amount of water and turmeric powder.
Add cloves, cinnamon and cardamom.
Add salt.
Cook till rice is done.
Also you can cook this on the stove by adding water to the same pan. But I prefer to cook in rice cooker for the easiness.
Once rice is cooked, mix well.
It is ready to serve.
