Kimchi Fried Rice (Kimchi Bokkeumbap)
Kimchi Fried rice is a Korean food. I am lucky to taste it in some restaurants in Singapore. When we go out for dinner, this is one of my favorites most of the time.
Last week I tried to cook it at home.The best rice for Kimchi Fried rice is sticky rice. And it is easy to eat with chopsticks. But here I used my normal cooked rice.I found this rice is very easy & simple to prepare.It gives a different flavor & good for a change.
Anyway Kimchi is pickled cabbage covered with hot pepper sauce. Most of Korean food includes Kimchi as an ingredient. Kimchi can be prepared at home, however it is available to buy at Asian groceries.
Ingredients (2 servings)
2 cups steamed/cooked rice
1 cup kimchi
2-3 Spring onions chopped (Including leaves)
1 tspn Garlic paste
Salt & pepper to taste
Sesame oil or any cooking oil to fry
Heat 2 tbspn oil in a pan
When it is hot add garlic paste. Fry for few seconds & then add spring onion.
Add Kimchi to the pan & mix well.
Finally add the rice .
Mix well & adjust salt & pepper. Actually this rice is spicy because of kimchi.
Off from the flame.
Kimchi fried rice is ready to serve.
