This Broccoli rice is perfect for meal box for both adults and kids. Due to the health benefits of this green veggie, I try to include it in different recipes. Broccoli Rice is one of them. I cook broccoli rice more often to pack in meal box. This is a really easy to cook one pot meal. For this recipe, I use 1 cup of broccoli florets together with another cup of mixed vegetables. Therefore, the rice is flavourful with the taste of broccoli. I usually use leftover rice for this rice, so this is a great recipe to minimize the wastage in my kitchen.


Next time, try this recipe with some leftover rice, I am sure you will like the taste!

Broccoli Rice
Rice Recipes

Here is my recipe.

Ingredients (For 2 servings)
2 Cups Cooked rice (leftover rice can be used)
1 cup Broccoli florets
1 cup of mix vegetables (carrot,leek,capsicum etc)
1 onion sliced
2 tspn Soya sauce
1 tspn red chilli powder
ΒΌ tspn turmeric powder
1 sprig curry leaves
Butter or ghee for  frying
1 tbspn Ginger Garlic paste
Salt as per taste

Method
Heat butter or ghee in a pan, add ginger garlic paste once it is hot.
Then add curry leaves & sliced onion. Fry until onions are tender.
Then add Broccoli, and other vegetables. Fry for few minutes.
Now add chilli powder & turmeric powder to the mix. Add a pinch of salt. Be careful with salt as we add soy sauce too.
Add soy sauce and cook for another few minutes.
Now add cooked rice into it. Mix well.
Serve hot  & enjoy!!
