Cauliflower curry is a popular dish in our home from few years.The main reason is that it is one of the veggie we can buy easily here in Singapore.I cook cauliflower in different recipes,even in different curry recipes.This is one of my Sri Lankan style Cauliflower curry recipes which I use chili powder and tomato.Also I use some oil to fry cauliflower before cooking the curry.
Among the all vegetables, cauliflower is something which need to add for the meal regularly because of its health benefits. It has benefits of Anti-oxidation, Anti Inflammation,fiber & digestive. Also it is a rich source of Vitamin B.

Ingredients (for 2 portions)
About 200g cauliflower
1 onion sliced
1 tspn Chili powder
1 tspn curry powder
¼ tsp turmeric powder
1 inch piece Cinnamon
½ tsp fenugreek seeds
½ tsp mustard seeds
1 tomato sliced
1 sprig of curry leaves
½ cup thick coconut milk
2-3tbspn cooking oil
Salt to taste
Method
Wash cauliflower & cut into florets.
Keep it aside.
In a pan, add oil & keep the burner on.
When the oil is hot, add mustard seeds. When the seeds start popping out, add sliced onion and mix well.
When the onion start to tender, add the cauliflower florets & mix well. Cook about 1-2 minutes with mixing well.
Then add all spices mentioned above & tomato slices. Mix well & close with a lid.
Cook for about 4 minutes & stir well.
If it seems that no moisture to cook cauliflower, add a bit of water & mix well. Cook until cauliflower is done.
Then add thick coconut milk & also adjust salt.
Simmer for few minutes.
Serve with rice or roti
