Sambal is a chilly based sause. It is found in many cuisine of many south east Asian countries including Singapore,Malaysia & Indonesia. Chillies are crushed with shrimps & make into a paste & it is called sambal. However it can be bought in many groceries.
Ingredients (For 2 person)
2 cups cooked rice (left over rice is better)
4-5 nos shelled prawns
50 grams chicken, diced to pieces
1 egg, beaten
1 cup mixed vegetables cut into pieces (carrot,leek,cabbage etc)
1 medium size onion, sliced
2 garlic cloves, chopped
3 tablespoons sambal dried shrimp paste (easily can buy from an Asian grocery)
Method
Heat 2 tablespoons oil in a pan, add sliced and chopped garlic ,sauté until fragrant.
Add diced chicken and prawns, fry until you get the aroma.
Then add the beaten egg slowly and scramble it.
Then, add mixed vegetables, red chilies and dried shrimp paste immediately. Mix well until well combined
Then add rice & fry well
Add a bit salt & pepper to taste. Mix well.
