This Sausage Rice is more similar to a Spanish Paella Recipe. The rice is more flavorful if it is cooked slowly on a stove. But in my recipe, I used the rice cooker. However, still this Sausage Rice is with full of flavor & it is very easy to cook.
Ingredients (For 4 portions)
2 ½ cups Long grained Rice (parboiled is better)
About 5-6 chicken franks/sausages cut into small pieces
3 ripe tomatoes chopped
1 onion sliced
2 cloves
1 cardamom,
1 stick cinnamon
½ tsp turmeric powder
1 red pepper
Chicken stock
Salt to taste
Butter or oil to fry
Method
First wash rice, drain & keep aside
Heat oil in a pan and when it is hot enough, add sliced onion and fry until lightly browned. Then add the sliced chicken sausages/franks and fry.
Add tomato & mix. Cook until you get a paste. At this time add red pepper.
Add rice & other spices on top of this & do not mix. (if you use a rice cooker, transfer the mix to the cooker first & add rice on top of it)
Add chicken stock according to the correct amount of water to cook rice. Add some warm water to the stock & prepare the correct amount of water.(usually 1.5 cups of water for 1 cup of rice for cooking in rice cooker)
Cook the rice.
Before you serve it, mix the rice well digging the ingredients in bottom of the pan.
