Rice recipes are favourites for most Sri Lankans.Simply,rice is staple in Sri Lanka.This Mexican rice suits our taste buds ,so I didn’t think twice to try it at my kitchen. 🙂
I wanted to try a different rice recipe and found this Mexican rice recipe from a website. It was really easy to cook and my house was full of aroma while cooking. The taste was delicious and I want to try this again.
Here is my recipe.
Ingredients (2 servings)
1 cup long-grain white rice
2 cups water
2-3 tbsp. Vegetable Oil
1 large onion, chopped
1 bell pepper sliced
1 tsp cumin seeds
2 cans Tomato Sauce
1 cup chicken stock
Wash rice and allow to drain water.
Heat oil in a pan and add onion once oil is hot. Sauté onion. Then add chopped bell pepper and cumin seeds. Sauté until bell pepper are tender.
Then add rice and cook it stirring frequently. Once rice is golden brown, Stir in tomato sauce and broth until rice is coated well with sauce. Add salt as per taste and also water.
Cook rice in a low flame for about 20 minutes. (**in this stage, I transferred the rice into rice cooker and cooked easily)
After water is absorbed and rice is cooked well, garnish and serve.
