Chickpea Rice is a delicious recipe with healthy addition of chickpeas.
This is a recipe I found that very easy to prepare & delicious in taste.
When I search for the recipe, I found it in many different methods, but finally this is how I prepared chickpea rice.
Check fried rice recipe before reading further.
Chickpea Rice Recipe
Ingredients (for 2 portions)
1 cup of Chickpeas soaked for about 5-6 hours
1 ½ cups of white long grained rice
1 medium sized onion sliced
¼ tsp Turmeric powder
¼ tsp cumin seed
¼ tsp Fennel seed
1 star anise (optional)
About 1 inch of cinnamon stick
1 red chilly sliced
1 stick of curry leaf
Piece of lemon grass
Oil to fry
Salt to taste (about ¼ tsp)
Wash the soaked chickpeas & keep aside to drain
Then wash rice, drain & keep aside
Prepare all ingredients.
Heat oil in a pan & fry onion first. Drain & keep it aside to use for garnishing.
Then for the heated oil, add spices other than turmeric powder. Sauté well.
Then add curry leaves & chilly pieces.
Once the curry leaves are tender,add rice & mix well.
Sauté until some rice grains start to pop up.
Then add drained chickpeas and mix well.
Now add correct amount of water & cook rice.
If you use a rice cooker, now add this mix to the rice cooker & add the normal correct amount of water.(1.5cups of water for 1 cup of rice or use the finger index)
Add turmeric powder & salt.
Once the rice is done, garnish it with fried onions.
Serve hot with some curry & a salad.
