Sri Lankan Karawila Sambola (Bitter Gourd Salad)

Making Sri Lankan karawila sambola or bitter gourd salad is a really easy task for any armature cook. However there are different ways that you can make this delicious salad when you have deep fried bitter gourd. Usually I make karawila sambola without adding tomato. I do not like my bitter gourd salad to have wet appearance as I want to enjoy the crispy taste. If you like to read how to make karawila sambola without tomatoes then check this recipe.

However my mother cooks this sambola with tomatoes. She finds it as the delicious way to make karawila salad so, every time I visit Sri Lanka I enjoy this salad with tomatoes.

In my recent Sri Lanka holiday, I decided to capture some photos of amma’s karawila sambola recipe in order to share in food corner. Best part is that these bitter gourds are from her home garden. I could enjoy picking bitter gourds to prepare the salad while admiring the Sri Lankan lifestyle.

In Sri Lankan cuisine there are different ways to add salads for the meal. If you like check these Sri Lankan salad recipes to find more ideas.

Bitter Gourd or Karawila is also known as a diabetic friendly food.However I don’t think this bitter gourd salad is a healthy choice for those who are with diabetic condition as we use deep fried bitter gourd here. 🙂 However it is all up to doctor’s advice.In case if you look for healthy Sri Lankan diabetic friendly recipe,then check this Thebu Kola Sambola recipe.

Recipe: Sri Lankan Karawila Sambola (Bitter Gourd Salad)

Sri Lankan Karawila Sambola Recipe

Ingredients: (2 -3 servings)

2-3 Bitter gourds (Karawila)

1 tomato

1 medium size onion

1-2 green chili or to taste

Salt to taste

1 tsp lime juice

Oil for frying

Method

Step 1 – Deep frying bitter gourd

Wash bitter gourd. Cut in to halves and remove the seeds.

Slice bitter gourd thinly.

Add the bitter gourd slices in to salt water. This step is to remove some bitter taste.

Once all bitter gourd are sliced allow to soak in saltish water for about 5 minutes.

Then wash & squeeze in salt water.

Do another 1-2 washes and squeeze the water.

Heat oil for deep frying.

Deep fry the bitter gourd until golden colour.

Step 2: Preparation of the Karawila salad

Slice onion & green chili.

Slice the tomato.

Add salt taste. Mix well with lime juice.

Then add deep fried bitter gourd to this mix.

Mix well again to absorb the flavours to bitter gourd.

Notes:

It is more flavourful when you mix the salad just before the meal .

You can keep deep fried bitter gourd in an air tight container for few weeks. Keep the air tight container in the fridge. When you want to prepare a bitter gourd salad, it is quick and easy as you already have deep fried karawila.
